• Homemade Coleslaw

    Homemade coleslaw tastes a THOUSAND times better than the stuff they sell in the shops.      And this recipe is so easy to do.

    The recipe will make enough delicious homemade coleslaw to serve 4 people,  plus leftovers.      It will keep in the fridge for two days.
    carrot grater

    Equipment
    A chopping board
    A medium sized vegetable knife
    A potato peeler
    A large bowl (to mix the coleslaw in)
    A cheese grater
    Some large spoons
    Ingredients
    A small onion  (red onions are best for this recipe as they are not too strong.)
    Two medium sized carrots
    A small white cabbage
    A jar of mayonnaise
    A large pot of Greek Yoghurt
    Black pepper
    How to make your coleslaw:

    1.  Prepare the onion.    Chop it in half, then slice it into very thin half-moon shapes.  Put the onion pieces into the large bowl.

    2.  Peel the carrots and grate them,  using the large section of the grater (like the picture above).    Watch your fingers!   When you only have a small chunk left, STOP GRATING!  (either eat the left over bit or throw it away).

    3.  Prepare the cabbage.   Peel away the outside layer of leaves.  These will be a bit scuffed and grimy.   Using your sharp knife,   slice off a chunk of the cabbage.  Cabbages are tough and are hard to cut into,  so be careful and make sure an adult knows what you are doing.

    Put the chunk of cabbage flat onto the chopping board, and cut it into thin slices – like you did for the onion.  Try and get them no wider than half a centimetre.  Then cut these long strips into shorter ones, of about 3cm.  Add these to the bowl and mix them in with the onion and carrot. Then slice off another chunk of cabbage and repeat the process until most of the cabbage is used up.

    4.  Add three tablespoons of mayonnaise and three tablespoons of yoghurt to the vegetables.  Using two spoons,  slowly  stir the creamy mixture through the vegetables until it is evenly mixed.  Add some black pepper and taste.

    5.   The coleslaw is ready now but ask yourself – is it creamy enough?   If not, add another tablespoon of mayonnaise and yoghurt.  Does it need black pepper – or even salt?  If so, add a little pepper and salt,   tasting as you go.

    To make the recipe your own,  try adding any of these:-

    Cheese
    Celery
    Peanuts
    Or even try adding some curry paste and sultanas -  it’s absolutely delicious!
